This high altitude grown Pacas varietal harvested from Finca Las Brisas undergoes oxygen deprivation & fermentation, followed by honey processing that lends to it’s all around sweet syrup mouthfeel with ripe plum fruit forward notes, invigorating honeysuckle aromatics, and dark chocolate finish.
During our medical mission to El Salvador this year, we were honored and privileged to be able to meet Carlos and his wife, Patricia, and learn first-hand what makes his multi-generational coffee production excel on the world stage.
Since 2012, Carlos transitioned his coffee farms to utilize real-time data to collect vital information that allows his team to efficiently and sustainably cultivate coffee, bringing us lots that shine. The meticulous processes to ensure a sustainable and replicable harvest annually goes beyond data. By planting nitrogen fixation shade trees and utilizing mycorrhiza, coffee trees are able to symbiotically grow and produce ruby red cherries at optimal efficiency.
